Pork Mince

Crunchy Pork Nachos

Ingredients

1 packet Heartland NZ pork mince

  • ½ red onion, finely diced
  • 2 garlic cloves, minced
  • ¼ tsp chilli powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • 1 tsp dried oregano
  • 400g tin crushed tomatoes
  • 1 cup water
  • 400g tin refried beans
  • 400g tin chilli beans
  • Salt and pepper to taste
  • 1 packet corn chips
  • Optional toppings
  • Iceberg lettuce, shredded
  • Grated cheese
  • Guacamole
  • Sour cream

Method

  1. Preheat oven to 180°C.
  2. Fry pork mince in a pan over medium heat until brown – about 10 minutes.
  3. Add red onion, garlic, chilli powder, cumin, garlic powder and oregano and cook for 5 minutes.
  4. Add crushed tomatoes, chilli beans and water, and cook until thick – about 20 minutes. Season with salt and pepper.
  5. Place corn chips in a large baking dish, top with refried beans, pork mixture and cheese, and bake in the oven for 20 minutes.
  6. Serve hot, topped with sour cream and guacamole.
