Pork Ribeye Roast

with Thyme, Garlic and Apple

1 packet Heartland NZ pork ribeye roast

  • 2 tbsp olive oil
  • 2 tbsp thyme, chopped
  • 1 tbsp garlic, crushed
  • 2 large apples, sliced
  • 2 cups chicken stock
  • 2 large red onions, sliced
  • Salt and pepper to taste


  1. Preheat oven to 180°C.
  2. In a bowl, combine oil, garlic, salt and pepper. Rub over pork.
  3. Place onions, apples and chicken stock in a large baking dish. Rest pork roast on top and bake in the oven for 45 minutes.
  4. Once cooked, remove the pork and apples from the baking dish and set aside to rest.
  5. Pour the remaining stock into a saucepan and make a light gravy by reducing over medium heat.
  6. Serve pork with mashed potatoes, apples and gravy.
